Ingredients:

For the marinade:

  • 1.5 pounds of lamb meat, cut into chunks
  • 1 tablespoon Jamaican curry powder
  • 1 tablespoon all-purpose flour
  • 1 tablespoon vegetable oil
  • 1 tablespoon tomato ketchup
  • 1 tablespoon soy sauce
  • 1 tablespoon brown sugar
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon minced garlic
  • 1 tablespoon minced ginger
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

For the curry:

  • 2 tablespoons vegetable oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon Jamaican curry powder
  • 1 teaspoon turmeric
  • 1 teaspoon paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon dried thyme
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup coconut milk
  • 1 cup chicken or beef broth
  • 2 potatoes, peeled and diced
  • 1 carrot, peeled and diced
  • 1 scallion, finely chopped
  • Fresh cilantro for garnish

Directions:

  1. In a bowl, combine all the marinade ingredients and mix well. Add the lamb chunks and toss to coat. Let the lamb marinate in the refrigerator for at least 1 hour or overnight for best results.
  2. In a large pot or Dutch oven, heat 2 tablespoons of vegetable oil over medium heat. Add the chopped onion, minced garlic, and sauté until softened and fragrant, about 3-4 minutes.

  5. Pour in the reserved marinade, coconut milk, and chicken or beef broth. Bring the mixture to a boil, then reduce the heat to low and let it simmer for 1 hour, stirring occasionally.
  6. Add the diced potatoes and carrots to the pot, and continue simmering until the lamb is tender and the vegetables are cooked for about 20-25 minutes.
  7. Taste and adjust seasoning with salt and pepper, if needed. Stir in the chopped scallions.
