Lamb Chops with Wine Cumin Sauce Recipe

For the lamb chops:

  • 4 lamb chops
  • 2 tablespoons olive oil
  • Salt and pepper to taste

For the wine cumin sauce:

  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 1 small shallot, minced
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 cup red wine
  • 1/2 cup beef or lamb broth
  • 1 tablespoon Dijon mustard
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)


  1. Preheat your oven to 400°F (200°C). Season the lamb chops generously with salt and pepper on both sides.
  2. Heat 2 tablespoons of olive oil in an oven-safe skillet over medium-high heat. Add the lamb chops and sear for 2-3 minutes per side until nicely browned. Transfer the skillet to the preheated oven and cook for another 5-7 minutes for medium-rare or longer for desired doneness.
  3. Remove the skillet from the oven and transfer the lamb chops to a plate to rest while you prepare the wine cumin sauce.
  4. Melt the butter and olive oil over medium heat in the same skillet. Add the minced shallot, garlic, and sauté for 2-3 minutes until softened.
  5. Stir in the ground cumin and cook for another minute until fragrant. Add the red wine and bring to a boil, then reduce the heat and simmer for 3-4 minutes until the wine has reduced by half.
  6. Add the beef or lamb broth and Dijon mustard to the skillet and stir to combine. Simmer for another 3-4 minutes until the sauce has thickened slightly. Season with salt and pepper to taste.
  7. Place the lamb chops back into the skillet with the wine cumin sauce and spoon some of the sauce over the chops. Let them simmer for another minute, basting with the sauce, until the chops are coated with the sauce and heated through.
  8. Remove the skillet from the heat. Garnish with fresh parsley, if desired.
  9. Serve the lamb chops with the wine cumin sauce alongside your favorite side dishes, such as roasted vegetables, mashed potatoes, or creamy polenta.
