Lamb Stuffed Artichoke Hearts Recipe

Ingredients:
For the artichoke hearts:
- 12 large artichoke hearts, drained and patted dry
- 1/4 cup olive oil
- Salt and pepper, to taste
For the lamb filling:
- 1 pound ground lamb
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 1/4 cup chopped fresh parsley
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 large egg
- 1 teaspoon dried oregano
- Salt and pepper, to taste
For the sauce:
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1 1/2 cups chicken broth
- 1/2 cup white wine
- 1/2 cup grated Parmesan cheese
Directions:
- Preheat your oven to 375°F (190°C) and grease a baking dish.
- In a large bowl, combine all the ingredients for the lamb filling, including ground lamb, onion, garlic, parsley, breadcrumbs, Parmesan cheese, egg, oregano, salt, and pepper. Mix well.
- Take each artichoke heart and carefully stuff it with the lamb mixture, pressing it in firmly.
- Place the stuffed artichoke hearts in the greased baking dish. Drizzle olive oil over the top and season with salt and pepper.
- Bake in the preheated oven for 25-30 minutes or until the lamb is cooked through and the artichoke hearts are tender.
- In a saucepan, melt butter over medium heat. To make a roux, add flour and cook for 1-2 minutes, constantly stirring.
- Gradually whisk in chicken broth and white wine, constantly stirring until the sauce thickens.
- Stir in grated Parmesan cheese and continue to cook for another 2-3 minutes until the sauce is smooth and creamy.
- Once the stuffed artichoke hearts are done baking, pour the sauce over them and return to the oven for another 5 minutes to allow the flavors to meld together.
- Remove from the oven and let the stuffed artichoke hearts cool for a few minutes before serving. Garnish with additional parsley and Parmesan cheese, if desired.
