Lamb Stuffed Artichoke Hearts Recipe

Ingredients:

For the artichoke hearts:

  • 12 large artichoke hearts, drained and patted dry
  • 1/4 cup olive oil
  • Salt and pepper, to taste

For the lamb filling:

  • 1 pound ground lamb
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1/4 cup chopped fresh parsley
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste

For the sauce:

  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 1/2 cups chicken broth
  • 1/2 cup white wine
  • 1/2 cup grated Parmesan cheese

Directions:

  1. Preheat your oven to 375°F (190°C) and grease a baking dish.
  2. In a large bowl, combine all the ingredients for the lamb filling, including ground lamb, onion, garlic, parsley, breadcrumbs, Parmesan cheese, egg, oregano, salt, and pepper. Mix well.
  3. Take each artichoke heart and carefully stuff it with the lamb mixture, pressing it in firmly.
  4. Place the stuffed artichoke hearts in the greased baking dish. Drizzle olive oil over the top and season with salt and pepper.
  5. Bake in the preheated oven for 25-30 minutes or until the lamb is cooked through and the artichoke hearts are tender.
  6. In a saucepan, melt butter over medium heat. To make a roux, add flour and cook for 1-2 minutes, constantly stirring.
  7. Gradually whisk in chicken broth and white wine, constantly stirring until the sauce thickens.
  8. Stir in grated Parmesan cheese and continue to cook for another 2-3 minutes until the sauce is smooth and creamy.
  9. Once the stuffed artichoke hearts are done baking, pour the sauce over them and return to the oven for another 5 minutes to allow the flavors to meld together.
  10. Remove from the oven and let the stuffed artichoke hearts cool for a few minutes before serving. Garnish with additional parsley and Parmesan cheese, if desired.
