Spiced Lamb Chops

With Red Wine Mint Sauce

Ingredients Directions
  • 8 rib or loin chops, about 1½ inches thick
  • olive oil
  • 3 cloves garlic, peeled and finely chopped
  • 1 tablespoon chopped Italian parsley
  • 1½ teaspoons dried mint
  • ¾ teaspoon powdered ginger

1. Preheat oven to 400°F.

2. Brush chops lightly with oil on both sides. Place in a shallow baking dish.

3. In a small bowl, mix together garlic, parsley, mint and ginger. Pat mixture on tops of chops.

4. Bake 20 minutes for medium-rare. Serve with Red Wine Mint Sauce.

Red Wine Mint Sauce

Ingredients Directions
  • ½ cup dry red wine
  • 3 tablespoons confectioners sugar
  • ¾ cup red wine vinegar
  • zest of 1 orange, finely grated
  • 4 tablespoons coarsely chopped fresh mint leaves
  • 1½ teaspoons dried mint leaves
  • ¼ teaspoon fresh black pepper

1. Heat wine in a small saucepan. Add sugar and swirl pan over heat until sugar dissolves. Place in a bowl and add vinegar. Cool slightly.

2. Blanch orange zest in boiling water for 15 seconds. Drain and add zest to sugar mixture. Stir in remaining ingredients. Let rest in refrigerator at least 1 hour before serving.
