Lamb Riblets

Ingredients Directions
  • 1 large onion, chopped
  • 1 tbs. olive oil
  • 2 pounds lamb riblets
  • 1 clove garlic, crushed
  • 3 tbs. vinegar
  • 3 tbs. lemon juice
  • 2 tbs. brown sugar
  • 1/3 cup chili sauce
  • 1/3 cup ketchup
  • ½ cup dry red wine
  • ½ tsp. salt
  • 1/8 tsp. pepper
  • 1 tsp. dried rosemary

1. Sauté onion in olive oil until tender, but not brown. Remove onion and discard. Brown meat on all sides in oil.

2. Add remaining ingredients, cover and bring to boil. Simmer about 1 hour.

3. Place riblets on pan, spoon sauce over, broil until done.
