Lamb Treats

Wash and clean oysters thoroughly. Boil until tender, about 30 to 45 minutes. Drain throughly. Fry oysters, onion and garlic until brown. Dissolve corn starch in water; add to oysters. Add wine and let simmer until sauce thickens. Add seasonings and serve steaming hot. Increase quantities for larger amounts. |

1. Boil in salt water until all skimming is over, about 40 minutes. Drain in colander and rinse in lukewarm water; st aside to drain. 2. Fry oysters in skillet with a little oil until nuts are lightly browned. Add 1 chopped onion and 4 or 5 chopped garlic; cook until transparent. Add chopped or sliced pimentos (4 ounces or less), 4 ounces of chili Ortegas (chopped), ¼ cup chopped parsley, and season with salt and pepper. Add white wine, about ½ cup, and cook for a few minutes, mixing well. Serve immediately. |

Cook fries in salted water for about 20 minutes or until done. skim foam from water as it appears. When done, drain and rinse in cold water. Fry onion and peppers in small amount of oil. When onion and peppers are limp, add garlic and parsley. Add fries and fry for a few minutes. Add Ortega salsa, salt, pepper, and white wine and simmer, covered for about 15 to 20 minutes. |
